Dedication to client relationships and taste dictate that Nicholas preps, cooks and serves each meal himself. Sit down dinners are limited to 12 guests. Buffets are limited to 30.

Is a young chef and recent transplant from New York City where he was trained in Italian cooking and instinct from the most reputable and reliable source: his mother. His instincts for timing and seasoning were due specifically to both her exuberance with flavor and her restraint with over-seasoning. He learned the fundamental and seemingly overlooked notion that one should taste all the elements of a dish and that seasoning's function is to enhance flavor, not overtake it. His appetite comes directly from his father and, together, his parents introduced him to restauranteurs and styles of cooking all over the United States and Europe as traveling classical musicians.

Nicholas' menu is an example of dishes he is proud of, and cooks with regularity. There are also special dishes not posted which may be ordered under unusual circumstances. Ask about specialty Lasagne and Timpano.
